Remove redundant meson options
    
    All of these options already match the upstream defaults, and there's no
    particular reason to assume we know better than upstream which options
    to enable, so let's follow the defaults and stop setting them. Build
    options are an exception to the rule that explicit is better than
    implicit.
    
    This shouldn't change anything.
